I am incredibly honoured to have been asked to review the Rum Cask Finish of Hyde No.2 Presidents Cask to sit alongside the Sherry Cask Finish above. Thanks so much to Hyde. Nose: Oak, pepper, zingy tropical fruits, coconut, slight sea breeze. Vanilla as it opens out. Palate: Spice straight away, ginger, quite oily, some lingering mango in the finish. Finish: Quite long as the flavours fade through tropical notes to lingering spice and warmth.
Distilled and matured in West Cork, Ireland, in bourbon casks, and then finished in sherry casks. 46% ABV. Non chill filtered. Nose: Biscuity malt, oak, light vanilla, poached peaches and cream, mild spice Palate: Oak, more malt, honey, apricots, fruit crumble with plenty of vanilla custard Finish: Long and lingering with plenty of spice. Leaves a tingle on the tongue.

Made by the Walsh Whiskey Distillery in County Carlow, Ireland, this is a blended whiskey made from both pot still and single malt whiskies. Nose: Dried fruit, very sweet, honey, vanilla, biscuits, notes of spring blossom Palate: Not as sweet as expected, pepper and spice, white wine vinegar, rounds out to mellow honey and stewed fruits. Finish: Warm and comforting slightly sweet vanilla, shortbread biscuits
